Consultant services for restaurant projects – in opening restaurants and training the restaurant staff

The opening of a restaurant must follow a precise line of procedures, with a well-defined timetable, planned in advance.

Following the complete re-opening of the Hotel de Crillon, and as head of the restaurant, I worked with our partners on the creation and the selection of the finest tableware. I also worked on the complete integration of all restaurant staff, as well as sharing the explanations of the head chef’s menu, and was involved in the tastings, as well as the wine pairings with the chef sommelier.

I repeated this experience for the opening of a bistronomic restaurant.

During this time, I acquired a real expertise in sourcing out suppliers, training teams, and putting in place service procedures.
